- 1 cup zapote seeds 🥭

- 1 cup cacao flowers (rosita de cacao) 🌸

- 1 cup sugar to taste 🍬

- Water (as needed) 💧


Instructions:


1. Preparing the Ingredients:

   - Soak the white and black corn in water overnight to soften. 💦

   - Toast the cacao beans and seeds on a griddle until lightly golden and fragrant. 🌞

   - Grate the mamey, avocado, and zapote seeds using a fine grater. 🧀

   - Wash the cacao flowers and remove the stems. 🌸


2. Grinding:

   - Drain the soaked corn and grind in a hand mill or electric grinder until you get a fine, smooth dough. 🌽💪

   - Add the toasted cacao beans and seeds to the mill and grind again until fully incorporated. 🔄


3. Mixing:

   - In a large bowl, mix the corn and cacao dough with water until you get a homogeneous and thick mixture. 🥣

   - Add the grated seeds and cacao flowers to the mixture and stir well. 🥭🌸


4. Serving:

   - Serve the tejate in jicaras or clay cups. 🥥🍶

   - Sweeten to taste with sugar and mix well. 🍬
